These very special, delicate flakes of sea salt are called salt flowers because they bloom on the surface of traditional saltpans during the summer in perfect weather conditions. Only a tiny amount of the production of traditional salt pans will be Flor de Sal. In Portugal it is highly prized as a finishing salt and sprinkled over food last thing before serving, to enhance flavours.
Sprinkle over simple dishes like eggs, asparagus, avocado, oysters, salads, roast vegetables, baked and new potatoes, or use in salted caramel sauce or in Margarita cocktails.
