18 Mar Portuguese Style Fish with Oregano
Delicious flounder, bought on Hastings beach from a fisherman, and cooked Portuguese style.
A very simple dish – lay any type of fish on a large sheet of non stick baking paper, add a drizzle of rapeseed or olive oil, then fresh lemon juice and a generous sprinkling of SaltPans Flor de Sal with Oregano. Wrap up fish in the baking paper, place on a baking tray and cook in a fairly hot oven (about 160 fan) for around 15 minutes.
Unwrap fish, use a spatula to lift it onto a plate, and then pour the juices over it.
